Banana Pancakes

Simple, naturally sweet pancakes made with just a few wholesome ingredients. Perfect for an easy breakfast.

Ingredients

  • 1 ripe banana

  • 2 eggs

  • ½ cup rolled oats, blended

  • Cinnamon, to taste

  • Avocado oil or butter, for cooking

  • Organic pure maple syrup or honey

  • Berries (optional topping)

Directions

  1. Mash the banana in a bowl until mostly smooth.

  2. Add the eggs and stir until well combined.

  3. Add the oats to a blender and blend until they reach a fine, flour-like consistency. Don’t skip this step! Blending the oats helps create a smoother, fluffier pancake texture.

  4. Add the blended oats and cinnamon to the banana and egg mixture and stir until everything is combined.

  5. Heat a lightly greased skillet over medium-low heat.

  6. Pour the batter into small pancakes and cook for about 2–3 minutes, or until the edges begin to set.

  7. Flip and cook for another 1–2 minutes, until cooked through.

  8. Serve warm with your favorite toppings.

These are one of my favorite simple breakfasts when I want something quick and nourishing. The eggs add protein, and while you can skip the oats, I like adding them for a little extra fiber, to make the pancakes more filling, and to give them a fluffier texture. I love topping mine with berries when I have them, plus a drizzle of honey or organic pure maple syrup for a little natural sweetness.
